Then, in a medium-sized saucepan, pour in the desired amount of water based on how many servings you intend to make. For each cup of water, add the prepared ginger slices or grated ginger. Place the saucepan over medium-high heat and bring the water to a boil.
Once the water is boiling, reduce the heat to low to maintain a gentle simmer. Let the ginger simmer in the water for about 10 to 15 minutes, allowing the ginger's flavors and beneficial compounds to infuse into the water. After simmering, remove the saucepan from the heat.
Using a fine-mesh sieve or tea strainer, carefully strain the ginger pieces from the liquid. Press down on the ginger with the back of a spoon to extract any remaining liquid. At this point, you can add honey to the tea if desired. Stir the honey into the tea until it completely dissolves.
